Restrained aromas of green asparagus, subtle elderflower and herbal aromas with a gorgeous vibrant acidity. Delicate but pure, with a steely, stony minerality, and a lingering, elegant finish.
Exceptional with many cheeses. Goats cheese salads especially but salads and lighter vegetarian dishes are in general a good match. Grilled fish also works well.
